CHALLENGE
Located at the heart of the Niagara region, in downtown St. Catharines Ontario, Dispatch Restaurant offers an unconventional dining experience where community values and sustainability interconnects with global cuisine. The menu features an exciting fusion of international flavors, complemented by a crafty beverage selection, and is characterized by a strong commitment to reduce food waste.
Dispatch came to the FBIC for assistance in development, optimizing and scaling-up a unique, chef inspired beverage called Mazagran Coffee, which is an Algerian inspired coffee-lemonade.
SOLUTION
For this project, the FBIC first assessed the current recipe and then conducted a product development feasibility study. Results were promising so this was followed by formulation and optimization of the novel coffee-lemonade product. During this process a food safety assessment was conducted to determine minimum temperature and time of pasteurization.
Once the commercially viable formula was developed, this project was taken to the next level at the FBIC HACCP-certified pilot plant where a scaled-up trial was completed. This is important, as it evaluates processing parameters, such as carbonation and pasteurization, before the client commits to a larger run, either at the FBIC pilot plant or a larger co-packing facility.
IMPACT
The new beverage tastes delicious and is currently available at Dispatch Restaurant and specialty stores across Ontario.
